If there is one thing I wish I ate more of, it’s pasta.  There is just something so comforting about making and eating pasta, not to mention it reminds me of my Italian grandparents.

Ingredients:

Sea Scallops

Baby Spinach

Red Tomatoes

Yellow Tomatoes

Garlic

Shallot

Chicken Stock

Season the scallops on all sides with salt and pepper. In a pan on high heat, melt the butter and sear the scallops for 4 minutes.

Once caramelized on the bottom, flip over and cook. Remove from the pan once cooked and set aside.

In the same pan melt the butter and toss in the mushrooms to caramelize. Once they are brown add in the shallots and garlic then sauté.
