Horseradish sauce is a well-known sauce accompaniment to prime rib at just about every steak house in the world. It’s a simple combination of raw prepared horseradish and crème Fraiche or sour cream. The goal is to help balance the flavors by adding a bit of spice and sour to the savory-umami taste of roasted meat.
Horseradish is an ancient herb that has been used in cuisine for centuries. It is a large, white, spicy root vegetable with peak seasons in the fall. Most commonly you can get already made in a creamy sauce mixture or raw and shredded and kept in the refrigerated food section of your grocery store.
How to Make Horseradish Sauce
Use these easy-to-follow instructions for making a homemade horseradish sauce:
Add all the ingredients to a medium-size bowl.

Whisk together the ingredients until combined and store them covered in the refrigerator until ready to use. Garnish with chives before serving.

Make-Ahead: You can make this up to 1 day ahead of time.
How to Store: With the chives in it you can cover and keep them in the refrigerator for up to 3 days. If there are no chives in it, you can cover and keep it in the refrigerator for up to 2 weeks.

Homemade Creamy Horseradish Sauce Recipe

Ingredients
- 1 cup crème fraiche
- ¼ cup mayonnaise
- ¼ cup prepared raw horseradish
- 1 tablespoon Dijon mustard
- 1 teaspoons Worcestershire sauce
- 2 teaspoons distilled vinegar
- salt and pepper to taste
- sliced chives for garnish
Instructions
- Add all the ingredients to a medium-size bowl except for the chives.
- Whisk together everything until combined and store covered in the refrigerator until ready to use.
- Garnish with chives before serving
I made this 2 years ago for a beef fillet on Christmas day and it was delicious. Chef, you even responded to a question I had about the consistancy of this on Christmas Eve; I was super impressed! I’m planning on making it again this Christmas. If I have a 9-pound fillet, should I double the recipe?

I have no idea what prepared raw horseradish is as opposed to raw horseradish.
It’s finely minced, in vinegar, and always labeled as prepared horseradish
