Chef, thank you so much for your videos. I love to cook and food is my passion. Your channel keeps me inspired. I cook in our outdoor pizza oven (800 degrees F) and use a cast iron 10 inch pan but would like to buy a 12 inch pan. I don’t see carbon steel in your equipment list. What is your opinion on carbon steel compared to cast iron?

the one that I have is on a crazy backorder. You can get a good box grater anywhere though.

Oh by the way, your apron (which I love) is as much a tool (necessity) in the kitchen as any other tool. Who makes it?
