    Blue Cheese Butter

Blue cheese butter is a simple recipe of softened butter, softened blue cheese crumbles, a hint of lemon juice, and salt and pepper. It is not an overly common recipe, but one that I used to make in the restaurant industry, which we would serve on crostini or steak.

This butter is best served at room temperature, so it is easy to spread on food. If it’s too cold it will break apart and not be overly pleasant to eat.

    Ingredients and Substitutions

    • Butter – I always use unsalted butter in my cooking and baking to control the sodium content. In addition, it’s important that butter be softened to room temperature so that it easily whips.
    • Cheese – I used Maytag blue cheese. However, you can use any blue cheese or gorgonzola will work.
    • Lemon — Freshly squeezed lemon juice adds clean acid to the butter, enhancing the flavor of whatever you serve it with.
    • Seasoning – Coarse salt and freshly cracked pepper is all that’s used.
