Crostini
Crostini means little toast in Italian and consists of small thin, sliced toasted bread. They are usually brushed with olive oil or butter and are served as the bottom to a canape which includes a savory topping such as cheese, shrimp, pâte, or other proteins. Crostini can also refer to a crouton used in soups or salads.
In addition to using it as part of a specific appetizer recipe, it is also used as a dipper for spreadable appetizers or dips. We would often serve them as an accompaniment to dishes such as smoked salmon.
Ingredients and Substitutions
- Bread – The best bread to use for this is a baguette. However, you can use any bread for this.
- Fat – You can use either melted unsalted butter or olive oil.
- Seasoning – I only use salt and pepper for this.
How to Make Crostini from Scratch
Slice the bread on a bias about a 1/2” inch thick.
Place the bread slices on a sheet tray lined with parchment paper. If you have a lot of slices, you may need 2 sheet trays. Evenly brush the melted butter or olive oil onto each bread slice.
Season them with salt and pepper.
Bake in the oven at 375° for 15 to 20 minutes or until browned around the edges and firm in the center, like a crust. Cool and serve.
Make-Ahead and Storage
Make-Ahead: You can make this recipe up to 2 days ahead of time.
How to Store: Cover and keep at room temperature for up to 5 days. Cover and refrigerate for up to 7 days. These do not freeze well.
Chef Notes + Tips
- You can eat this as soon as they are done baking.
- Slicing on a bias means cutting it at a slight angle.
- You can enhance the flavor of these crostini by evenly sprinkling on 1 tablespoon of garlic granules, 1 tablespoon of onion granules, 1 tablespoon of dry thyme, or a combination.
